Low carb, low fat, low calorie and low in cost!

I haven't posted any food for quite a while. It would be quite boring to show you the slow roasted chicken thighs and nothing else I had for lunch yesterday! Some of what I'm eating is especially delicious and here are a couple of real favourites of mine. Last night, as we were home quite late, I made a vegetable Fritatta. Chop which ever veggies you have and cook them. I quickly boiled three chopped carrots. I also coated one large courgette, some onions, yellow pepper and mushroom in one tablespoon of olive oil, stirring it through until they were all evenly coated. I then used a heavy pan and a low heat to cook them all through whilst stirring occasionally. This is also really good with cooked spring greens, green beans or broccoli.





I used four large eggs and mixed in one large tablespoon of low fat grated cheddar and then mixed the cooked vegetables and beaten egg mixture together and poured all the mixture into a lightly oiled pie dish. I then cooked it all in my mini oven for about 15 minutes.



I forgot to mention that I added some chopped raw tomatoes too. You can see the finished result is far more veggies than egg. We had half each for supper. I often cook this in advance and we have it cold for lunch or supper, we'll eat it with salad or freshly made spicy salsa. 



Now onto my favourite weekend breakfast. I made low fat, low carb, low calorie pancakes from: one heaped tablespoon of oat bran, one tablespoon of fat free cream cheese and one egg and I beat them together and loosened the mixture with some skimmed milk.



I use a paper towel with a dab of oil to grease the frying pan and then cooked them on a very low heat so they cooked through without burning. I also use these to make the 'lasagne' in pasta dishes or slice them finely like spaghetti to use with a tomato and vegetable sauce. They can be made in advance and stored between greaseproof paper in the fridge for two or three days.




We also like them freshly made for breakfast with lemon juice and Splenda and a mug of freshly made coffee.  I'm now losing around 1lb a week or my weight stays the same and a week later I'll notice another 1lb weight loss. It gets increasingly more difficult to lose weight the older I get, so I see the very slow and gradual weight loss, or staying the same as a positive because I'm not putting on any more weight. I also understand that, like a recovering addict, I can never go back to eating the way I did before as the temptation to over eat or eat calorie rich food is too tempting. I'm quite happy to be eating around 40% less calories than I used to and can really see the financial benefit of smaller meals and no snacks of any kind between meals.

  1. These both look delicious. I'm also trying to lose some weight and think I'll have a go at your pancakes. I've have found it very helpful to record all my food so that I can see, if I've been tempted one day I can cut back the next.

  2. Thanks for the tips, I look forward to more posts, I have had to drastically change my ways as I am considerably overweight. I have been on this weight loss malarkey now for 15 weeks and it is tough, tough, tough....the benefits out way the negatives though.

  3. Yummy looking meals there Froogs. I think I will try the vegetable frittata because it sounds so healthy :)

    I am turning fifty at the end of this year and finding it increasingly difficult to budge the bulge, it takes a lot more hard work than when I was younger...

  4. Both of those meals look delicious, I rather fancy some of those pancakes right now, but I am not going to bother at 10.30pm. I am continuing to enjoy your blog very much. Thank you for all the work you put into it.

    Just a note a much healthier alternative to splenda is stevia.

  5. I would second Ronniie`s suggestion of stevia as a sweetener. I have just used it to sweeten some rhubarb from the garden.

  6. Mmmm loving the look of the frittata! I may try that but I don't have a mini oven. Any suggestions on how long to cook in an electric fan oven/what temperature?

    Just want to say also, losing a pound a week sounds good to me (wish I could even do that!) as slow & steady and more likely to keep it off that way too, I'm sure.

  7. Those pancakes look delicious. I have never tried that, do they taste nice too? Making my mouth water.

    I have wanted to make pancakes but I am adapting a version of food combining, veggie style but just merely not mixing protein with carbohydrate etc. I don't have much weight to lose but I have lost 4lb in the last couple of weeks. I would love to lose that amount just on my boobies as I'm quite booby.
