Hello Dear Reader,

I'm off to battle the fallen debris to get to Radio Cornwall - I'm on a 11 am giving advice on saving money at Christmas - email the radio station if you can share any advice about avoiding debt and keeping costs down at Christmas.   1. I followed your link and listened in to you on the radio...... it was just great, one to hear your voice and two to listen and pick up on your enthusiuam....

    this is the facebook status I have just put on my page.... and I will stick with it..

    'I do not really begin to think of Crimbo until Dec 1... but this year the few people I like to give a gift to will get either something... homemade with love, something special picked from my own precious possessions or something stolen HAHAHAHA each gift will be given oozing love, I WILL NOT jump on the consumer bandwagon, there is just to much shit around this time of year, everyone trying to outdo each other and boasting about this that and the other, often going into debt to try and impress others , people spend money they do not have on 'things' they and others do not need...... ok, just donning me mask and striped black and white T-shirt and throwing me swag bag over me shoulder, Im off out, Im got pressies to steal LOL - remember maties, its not the expensive gifts one remembers about christmas, its about the people you share it with, either in person or in thought.... x'

  3. Hello froogs
    Just finished listening to you on Radio Cornwall fab! here is a recipe for

    coconut ice.

    Ingredients

    Butter, for greasing
    397g can condensed milk
    350g desiccated coconut
    350g icing sugar
    Few drops of vanilla extract
    Pink or red food colouring

    Method

    1. You will need a 23cm x 20cm x 4cm deep cake tin. Rub a little butter over the inside of the tin, then line the tin and 2 of the sides with baking paper.
    2. Pour the condensed milk into a big bowl. Add the coconut, icing sugar and vanilla extract and mix really well. Spoon half of the mixture into the square cake tin, then flatten it by pressing with damp fingers.
    3. Add a few drops of pink or red food colouring to the mixture left in the bowl and mix evenly. Spoon the coloured mixture over the top of the white layer and use damp fingers to smooth the top.
    4. Loosely cover and put in a cool place overnight to set and dry out. Use the baking paper to lift the coconut ice from the tin, then cut into about 40 pieces. Store in an airtight tin in a cool place for up to 3 weeks.

    Chef's tip

    This coconut ice needs a day to set, so don’t be tempted to eat it beforehand.
    However if you don't have any condensed milk at home or it is expensive fro you to buy this will work just as well.

    1/3 cup hot water
    2/3 cup sugar
    1 cup powdered milk - this can be full cream or skim milk
    3 tablespoons butter


    Melt the sugar in the hot water, then put all your ingredients into a food processor or blender. Mix slowly at first until everything is combined, then use high speed until everything is smooth.

    Peppermint creams are as follows...


    Ingredients

    500g (1lb 2oz) icing sugar, sifted
    1 egg white, stiffly whipped
    1-2tsp lemon juice
    Few drops peppermint oil, to taste

    To decorate:

    Half a 36g jar natural crystallised violet petals
    Half a 36g jar natural crystallised rose petals

    Method

    Mix together the icing sugar, egg white, lemon juice and peppermint oil until you have the texture of pastry. Knead well so that the mixture is smooth, then roll out on a work surface lightly dusted with icing sugar to a thickness of 1cm (½in).
    Cut out rounds with a 2½-4cm (1-1½in) cutter - or for fun, try different shaped cutters such as stars, hearts and moons. Pop them on a piece of greaseproof paper and Leave to harden for 12 hours or overnight.
    Sainsburys sell Basic plain milk and white chocolate approx 30p per bad is very good to eat if you wanted to cover them

  4. Brilliant. I really enjoyed listening to that. I think you may have a new fan. OH was listening in the background, he kept coming and saying, "yes she's right about that!". The one tip I will take with me is no buying chocolates. I have family coming round and they always bring stuff with them (usually stuff they have had bought) and we end up with way an obscene amount of treats. I'll save my money. I have bought very cheap crackers this year but I like the idea of popping something inside them to make them more special (ideas welcome):). Thinking of everyone in Cornwall with storms. Take care.
